Healthy Kale Margarita for Cinco De Mayo
Celebrate Cinco De Mayo and still get your daily serving of vegetables with a kale margarita. Yes, you read that right - kale. Fitness expert Terri Allen shares her recipe for this updated take on the classic margarita.
1/2 oz. kale ginger juice (prepared from raw kale according to juicer instructions and strained through cheesecloth. Adjust quantity to taste.)
2 oz. Blanco tequila
1 oz. lime juice
3/4 oz. agave nectar
1/4 cup agave to rim the glass
Dip the top of the glass in a shallow plate of the agave nectar to coat the rim. Fill a cocktail shaker with ice and pour in all ingredients. Shake well and pour over ice in your agave rimmed glass. Enjoy!
