French Vanilla Cappuccino Cupcakes

The light and fluffy cake balances perfectly with the bold flavor of the smooth coffee frosting. This divine semi-homemade treat will leave you fully satisfied. 
 
Cupcakes:
1 Box Duncan Hines White Cake Mix
3.9 oz. package Jell-O Vanilla Instant Pudding Mix
4 egg whites
1⁄2 C sour cream
1/3 C vegetable oil
1 C milk
1 T coffee extract
1 tsp vanilla extract
1/4 tsp sea salt
Frosting:
1 C (2 sticks) unsalted butter 
4-5 C confectioners' sugar
1 C French vanilla cappuccino powder
2 tsp coffee extract
4-5 T heavy cream
1/8 C instant espresso grounds
 
 

Mocha Whoopie Pies

If you have never had a homemade whoopee pie, you are missing out on a delicious decadence. With soft, cakey cookies held together with heavenly mocha frosting, you couldn’t do any better.
 
Whoopies:
1⁄4 C unsalted butter
1 C granulated sugar
1 large egg
1 tsp vanilla extract
1 C all purpose flour
1 C white whole wheat flour
1⁄3 C unsweetened cocoa powder
11⁄2 tsp baking soda
11⁄2 tsp fine sea salt
1 C buttermilk
Filling:
1⁄4 C whole milk
2 tsp instant espresso coffee
1⁄4 C unsalted butter
1⁄4 C Spectrum organic shortening
1⁄2 C unsweetened cocoa powder
1⁄2 tsp fine sea salt
1 large Safest Choice Pasteurized egg
4 C confectioner's sugar

Chocolate Espresso Cookies

These chewy cookies are packed with extreme chocolate flavor, thanks to more than two pounds of chocolate. The espresso provides an amazing element to these cookies that anyone will enjoy. They taste much like brownie, only less dense. 
 
 
2 2⁄3 C (around 16 oz.) bittersweet chocolate, chopped
4 T butter
4 eggs
11⁄3 C of granulated sugar
1 tsp vanilla extract
1⁄2 C all-purpose flour
1⁄2 tsp baking powder
1 T espresso
1 C semisweet or bittersweet chocolate chips

4 tbsp coffee powder
1 tbsp cocoa powder (optional)
5 tbsp hot water
4 tbsp sugar
3 cups milk
A few ice cubes
